A 12" crepe pro carbon steel pan with a 'Crepe Pro' handle sits on a lit gas stove burner, cooking a thin crepe. The scene is set on a dark wood countertop with bowls of batter, butter, fresh berries, and a checkered kitchen towel, against a textured beige tile wall.

What makes a great crepe

Even heat

Hot spots give you pale centers and burnt edges. Carbon steel spreads heat evenly, edge to edge.

A low, flat surface

No tall sides in the way, so you can swirl the batter thin and get the spatula under easily.

A seasoned surface

Seasoned carbon steel releases a crepe cleanly, with no synthetic coating.

The right tools

A beechwood spreader for a thin, round crepe and a long spatula for the flip. Both come in the Bundle Kit.

Classic crepe batter

Makes about 10 crepes

  • 1 cup all-purpose flour
  • 2 eggs
  • 1¼ cups milk
  • 2 tbsp melted butter
  • Pinch of salt (plus 1 tbsp sugar for sweet crepes)
  1. Whisk and rest. Blend everything until smooth, then let it rest for 20 to 30 minutes.
  2. Preheat. Give the Crepe Pro a few minutes on medium heat, then wipe on a little butter.
  3. Pour and swirl. Ladle about ¼ cup of batter into the center and spread it thin in one circle with the spreader.
  4. Flip. When the edges turn golden and lift, slide the spatula under and turn it for 20 to 30 seconds.
  5. Fill and fold. Sweet or savory, then fold and serve.

Questions

Why do my first crepes come out wrong?

Almost everyone tosses the first one. Preheat a few minutes on medium, wipe on a little butter, and the next one will come out golden.

Does it come seasoned?

No, on purpose. It arrives unseasoned so you can build a strong, natural nonstick layer. It takes a few minutes with oil and heat, and our care guide walks you through it.

Will it work on my stove?

Yes. Gas, electric and induction, and it's oven-safe.

Is it only for crepes?

No. It's great for pancakes, dosas, roti, tortillas and eggs, and it doubles as a pizza or baking surface.

What's in the Bundle Kit?

The 12" Crepe Pro pan, a beechwood crepe spreader and a 14" crepe spatula. It's $100 ($108 if bought separately) and ships free.
