The Ice Cube Test: Why Steel Beats Stone for Pizza (and Why Your Crepe Pan Is Secretly a Pizza Steel)

Here is a 2-minute experiment that settles the pizza stone vs. steel debate better than any spec sheet. Grab a pizza stone, a carbon steel pan, and a few ice cubes. Set them side by side at room temperature, drop a small pile of ice on each, and start a timer.

The ice on the steel starts melting almost immediately. The ice on the stone just sits there.

Both surfaces are the exact same temperature. So what is going on? And what does it have to do with your pizza?

What the Ice Is Telling You

Temperature tells you how hot something is. It does not tell you how fast that heat can move. That second part is called thermal conductivity, and it is the whole story here.

  • Carbon steel moves heat roughly 10 to 15 times faster than the cordierite most pizza stones are made from.
  • Steel also holds more heat in the same amount of space, close to twice as much as a stone of the same size.

So when the ice touches steel, the pan pours its stored heat into the ice fast. The stone has heat to give, but it hands it over slowly. It is the same reason a metal bench feels colder than a wooden one on the same morning.

Now Flip It Around: Hot Surface, Cold Dough

Pizza is the ice cube test in reverse. Instead of a cold cube on a room-temp surface, you have cool, wet dough hitting a hot surface. Whatever moves heat into that dough fastest wins:

  • Faster oven spring. The bottom sets before the toppings weigh it down.
  • Real browning and leopard spots instead of a pale, bready base.
  • Shorter bake times, so the cheese melts without the crust drying out.

A stone can get there, but it needs a long preheat and it cools down where the dough lands. Steel keeps pushing heat into the crust the whole time.

Check It With a Thermometer

If you have an infrared thermometer, use it. Preheat both surfaces the same way, confirm they read the same, then launch a pizza on each. The crust tells you everything: same temperature on the gun, very different bottoms on the cutting board.

Your Crepe Pan Is a Pizza Steel

Here is the part most people miss. A dedicated baking steel is just a slab of carbon steel. Our CrepePro 12" (also available in the CrepePro 12" Bundle Kit), our 14" & 16" straight-handle carbon steel pans, and The 726 (14" nitrogen-infused carbon steel pan) are made from the same high-conductivity steel, with low, flat sides that let your broiler reach the top of the pie.

That means:

  • No 60-minute preheat. Heat the pan on the stovetop for about 5 minutes, then finish under the broiler.
  • No 15-pound slab living in your oven.
  • One pan for crepes on Saturday, dosas on Sunday, and pizza on Friday night.

We walk through the full stovetop and broiler method in How to Make Pizza on a Carbon Steel Pan, and we compared all three surfaces head to head in Pizza Stone vs Baking Steel vs Carbon Steel Pan.

Run the Test Yourself

  1. Set a pizza stone and a carbon steel pan side by side at room temperature.
  2. Put an equal pile of ice cubes on each.
  3. Start a timer and watch. Check again at 1 and 3 minutes.
  4. Film it and tag us. We love seeing the results from your kitchen.

FAQ

Is a pizza stone useless then?

Not at all. Stones are great for bread, and if you already own one, use it. Steel just gives you a crispier, faster pizza crust with far less preheating.

Does my pan need to be seasoned for pizza?

Yes. A few good seasoning layers help the crust release cleanly. Our 10-minute seasoning guide walks you through it.

Can carbon steel handle broiler heat?

Yes. Carbon steel is comfortable well above typical home oven temperatures, and every ELMNT 726 pan is oven-safe.

Will the ice test hurt my pan?

No. Just dry the pan completely when you are done and wipe on a thin layer of oil, the same as after any wash.
